Easy Homemade Pumpkin Nut Bread

I can’t even express to you how good this smells while it’s cooking. Me - YOW!

This is a good make-ahead for the holiday weekend. Leave of the glaze and it makes for a great breakfast bread. (However, I’m pretty sure it won’t make it very long.) It’s also super-easy to make.

Homemade Pumpkin Nut Bread

Pumpkin-Nut Bread

  • 3/4 cup canned pumpkin
  • 1 3/4 cup sugar
  • 3/4 cup unsalted butter softened
  • pinch of salt
  • 1/2 tsp pumpkin pie spice
  • 2 tsp. baking soda
  • 1 tsp. vanilla
  • 2 cups flour (all purpose)
  • 1/3 cup buttermilk
  • 5 eggs
  • 1 cup pecans (roughly chopped)
  • 1 cup golden raisins (I plump mine in white rum)

Preheat your oven to 300 degrees. Start by mixing the first 3 ingredients together in a large bowl until well incorporated. Add the salt, baking soda, pumpkin pie spice and vanilla.  At this point, alternate adding the flour with the buttermilk and eggs. Once everything is well mixed use a large spoon to stir in the nuts and raisins. (see below, for plumping instructions)

Transfer batter to a bundt  pan (affiliate link) that has been lightly greased and floured. Cook in the center of your oven at 300 degrees for 60 minutes. Prepare glaze.

Remove pan from oven and let it cool for 15 minutes before you flip onto your plate.  Glaze top and sides with off-set spatula or butter knife.

Cinnamon Glaze

  • 2 cups confectioner’s sugar
  • 1/2 tsp vanila
  • 2 tbsp butter softened
  • 1/4 tsp cinnamon
  • 1 pinch nutmeg
  • 2 tbsp milk

Whisk all ingredients together until smooth. It’s a bit stubborn at first (using a fork helps) but if you keep at it, it will get nice and smooth.  Use as much or as little as you like. Glaze will set much like an icing.

Pumpkin-Nut Bread

*To plump your raisins measure out 1 cup of raisins and cover with approximately 1 cup of white rum (use dark rum if you use regular raisins).  Cover with plastic wrap and let sit for 4 hours.  Raisins can also be plumped in hot water if you prefer.

  • This is a 25-year-old book page that was the first purchase I made when I started dreaming about the new kitchen! I was the inspiration for the black, white, and gray.

Back-splash storage system - Ikea  (totally worth it!)

Paint colors:

For the trim and upper cabinets, I chose a slightly warmer white to keep it from being to “chalky” looking once everything was put together.  And, for the wall, I wanted something with just enough color to highlight and brighten the white. The pearl gray look of the walls turned out even better than I hoped! If I had one regret, I wish we had gone darker for the lower cabinets. I had originally chosen something darker, then chickened out at the paint counter. Shoot!  Well, I can always go a little darker later.

Opening the wall into the living room was the best decision. The kitchen was so dark before. I could turn on all of the lights and it was still a bit like a cave.  Now, with the wall gone, there seems to be more light everywhere! I hardly need to turn a light on to prepare dinner. And, when I’m cooking, the boys can sit at the extra wide bar and I still have so much room to spread out!!

Are these new cabinets or did you just refinish old cabinets? On your end cabinet near the range, the vertical ridges were originally in the cabinet or did you add them?

Thank you Sarah! I started off by lightly sanding them then, I used Kilz as a primer for the upper cabinets and the lower cabinets are painted with a primer+paint color. (They have all got 2 coats of paint.) I rolled as much of the area as I could and hand-brushed the rest. (I didn’t want to spray them because the paint has to be pretty thin to go through the sprayer.) I hope this helps!

Hi Brenda,
Nice to meet you! Moving the hinges inside were an afterthought. (After I had painted them white.) So, I used a basic wall hole spackle to fill them in. I can’t remember the brand of the hinges but you should be able to find them at any hardware store. The basic hidden hinges are much less expensive than the soft-close.

Good luck with your bathroom! (I would totally keep the cabinets!)

Beautiful transformation! Perhaps you can answer two questions for me about your cabinets. a)I noticed they originally had visible hinges and it appears they now don’t. May I ask what you replaced them with? b) Prior to painting, did you apply a Wood Filler first to eliminate the Oak wood grain to prevent it from showing through? THANK YOU so much.

Up until this week, we’ve had a glorious fall in the upstate of South Carolina. The colors of the leaves this year are extremely brilliant. My roses and a hardy red geranium were still blooming in my yard 2 days ago. Our November mornings and nights have been cool and the mid-days are brisk and breezy. Last week, we had a huge yellow-orange harvest moon. A few of the straggler Canadian geese are flying overhead in V formation. All of this makes me happy that I live in a place that has such distinct seasons.

If you don’t live in the upstate, come for a weekend and spend time outside. We are in a beautiful sliver of the Carolinas that is tucked snugly below the Blue Ridge mountains and within a comfortable driving distance of the beach. Listen for the leaves crunching under your feet, and don’t forget to smell the roses that are still blooming with a lovely scent.
