Kitchen Tour - part 1

Now that we’re finally done I’m excited to share the details, but here’s where we started . . .

The picture to the far left is the wall that came out (woo hoo!) and became my double-depth counter-top. The cabinets here were re-configured to work around the new design and the uppers were painted the same white semi-gloss as the trim while the lowers were painted a charcoal gray. If I had know the opening would let in so much light I would have gone even darker on the lower cabinets.

The picture on the far is where we pulled out upper and lower cabinets to build the new pantry and the opening for the fridge. We re-used the cabinet above and painted it the pale gray to match the surrounding walls to help give the fridge a more built-in look. FYI- if you’re thinking of creating a built in area for your fridge: We put a vent at the top of the wall and vented it into the pantry to help the refrigerator vent properly.

We pulled out the tile floor and replaced it with a vinyl floor. (SO much easier to clean!!) My new pantry is super small but the most wonderful little storage area.  And, it hides the microwave!  Did I forget to mention, what an amazing difference the ceiling trim makes?

Hi Janet, That’s what mine are. (One reason I hated them before.) But, the doors are wooden. That’s why I used the Kilz to so of seal them as well as prime them before painting. Since, sanding was out of the question.

NO I still do not think people get what I am trying to convey.
The whole cupboards are made of the chipped pressed wood with a paper like cover over that. it is not wood .

Stuffed Lunchbox Pizza

 

Stuffed Lunchbox Pizza

 

I know that adorable lunchbox art is all the rage but if I send my 13 year old to middle school with an artful lunchbox arrangement I most definitely feel his rage. However, he LOVES when I make homemade calzones. So, I decided to come up with an easy make ahead lunch for him. They can be frozen up to 4 weeks ahead. It’s a great way to buy yourself a few extra minutes in the morning! And, I swear these are super easy! It’s really more of a how-to than a recipe.

 

 

Ingredients:
Package of pre-made frozen bread dough - thaw over-night in your refrigerator (I prefer Bridgeford but any brand should do.)
1 jar marinara sauce (I sometime use leftover homemade sauce, either works fine)
1 cup pizza cheese (I use a mix of 2 parts mozzarella, 1 part ricotta, and 1 part Parmesan as well as some Italian spices)
Italian Spices (oregano, garlic powder, &  rosemary)
1 cup all-purpose flour

Supplies:

4.5 inch round cutter
Rolling pin
Half-size sheet pan
Freezer paper
Parchment Paper

How to pizza 1

Pre-heat your oven to 375 degrees.  Roll out your first ball of dough on a floured work surface.

You should be able to get 5-6 rounds (1/2 inch thick) of dough cut from each loaf.

How to pizza 3

     Lay the first batch of six out on a sheet pan lined with parchment paper.  Cover each round with approximately 1 tbsp of marinara sauce leaving a margin of about 3/4 inch around the edge.  Follow this with about 1 tbsp of your cheese mixture. I find it helps to use your fingers to get each round really covered. Now, roll out your second batch of dough rounds.

Take your second batch of dough rounds and cover your first batch of mini pizzas. Be careful to ease the tops on from the back to the front to keep your sauce and cheese from sliding out. At this point you’ll want to use your fork (dipped in a little flour) to seal the edges around the outside of your stuffed pizzas.

Cook your pizzas 15-20 minutes in your pre-heated oven.  Once these cool, I wrap them in freezer paper and slide them into a freezer bag marked with the proper re-heat instructions. You’ll want to take put them in the fridge the night before so that they will be thawed by the next day’s lunchtime.

I’m Ba-aack!

Whew, what started as a few weeks off from blogging turned into a disappearing act. It seemed like, just as the blog started to gain some momentum is when I decided to step away. Well, the dust has finally settled and I’m ready to get back in the rhythm of weekly blogging. What started as a small-ish kitchen renovation turned into a Tolkien-like adventure. (No hobbits but a lot of troll-ing around Pinterest! Sorry, I couldn’t resist.)

To start with, I was getting the kitchen ready to be pulled apart and put back together as my contractor was due to start in mid-June. After a few weeks of pushing back our start date and cooking, cleaning, and essentially living out of our tiny dining room we learned that our contractor wouldn’t be able to start out job. So, luckily, I was able to find another contractor willing to work with my plans but he had other jobs to complete before he could get started.

Ta DAH! Here it is! Finally!
