I’m still working on my dream office so I bought a clean simple frame for mine. This way, if I need to remember something extra special I can use dry-erase marker and mark the glass.  (I can’t wait to share everything put together!)  For now, here’s February:

Carrots part 1

      10 lbs. of Carrots 3 ways!

I absolutely love carrots but I prefer them cooked to raw.  This year I’m trying to do more cooking (hubby is thrilled, G - not so much) and trying to add a little more variety to my repertoire recipes. To start with, I thought I’d pay a little homage to one of my (and Bugs Bunny’s) favorite veggies, the carrot! So I’m going to show you how to work with them 3 different ways.

I’ve been watching a lot of cooking programs lately to get ideas and one afternoon, I noticed all of my faves seemed to be roasting different veggies to go along with all of their different  entree’s.  Well, maybe I’m a little late to the party but some of these, I never thought to roast, who knew?

So, let’s start with something simple. If you’re looking for a quick dinner, this isn’t it. But, sometimes I like something that’s easier, than it is fast. Being able to toss ingredients together and throw them in the oven, or on the stove for an hour can give me the perfect opportunity to prep food for quick meals later in the week, help G study, or just spend time chatting with him before hubby gets home.

For my family of 3 I actually only used 5lbs. of carrots but for larger families I would definitely go with 10lbs.  Start by cleaning 1/3 of your carrots (or, enough for tonight’s dinner).  Then, while those are on the oven your can work on cleaning and prepping the remaining 2/3rds for later on.

Home Office - Getting Started

I’ve been dreaming and planning a kitchen upgrade. But, since we will be bringing down a wall and opening it up into the living room I’m working to reconfigure our home office area. The “home office” area, as it is has been mostly unusable as a desk so my plan is to make this area into something we can use again. A full service work station for all of us.

A few years back a friend of ours was purging and offered this precious little desk. She’s not too dainty and not too large and, best of all, her style really plays well with others!

Since the original wall and old desk are going away (yippee!) here’s the corner that’s becoming our new home office . . .

I love the beautiful organization areas. And the bold colors!!  This may be my chance to sneak in a little dash of pink here and there. Shhhh, stay tuned and see!
